Asian Noodle Salad
This is a colourful cold pasta salad full of healthy vitamins and minerals. The pasta is a good source of complex carbohydrates for sustained energy. It makes for a great light meal for lunch the day of competition.

Ingredients
- 1/2 cup Carrots grated
- 1 cup Broccoli chopped
- 1/2 cup Cilantro chopped
- 2 heads Baby Bok Choy chopped
- 1/4 cup Green Onions chopped
- 1/4 cup Bean Shoots
Dressing- 1/4 cup Bragg's soya sauce gluten free
- 1 tablespoon Sesame Seeds
- 1 tablespoon Honey
- 1 tablespoon Sesame Oil
- 1/4 cup Rice Vinegar
- 1 teaspoon Fresh Ginger
Serve Over:- 1 package Buckwheat Noodles gluten free
Directions
- Prepare noodles according to packet instructions, drain, rinse and let cool.
- Place noodles, cut vegetables and cilantro in a large bowl and mix.
- In a small mixing bowl combine all dressing ingredients and mix well. Add dressing to noodles right before serving.
- 1 package Buckwheat Noodles gluten free

I ran across your recipe – I will try this one out Friday the 25th of June for Rookie Camp 65ppl the Ottawa Senators at The ScotiaBank Place, I will keep you posted, personally I like it alot that I decided to make it for them, so after their intense workout they need that boost.

Rookie camp went well, the 45 rookies enjoyed the salad so much that they wanted more {I only made enough for 60}, The coach for the Ottawa Senators loved it, the taste, aroma, and Buckwheat noodles. The Player Camp is coming up in another 3 weeks before Hockey season commences, and they heard about the salad – …. Excellent work, I thank you for the recipe, and I will be mentioning your site to the Ottawa Senators.

I went to a soccer tournament in Kimberlely, BC and the girls in my condo made this salad to eat in between our games. It was a quick salad to make during this hot tournament. It was filling but wasn’t heavy, which was perfect.

This salad is similar to the one in the “Love Your Body Lunchbox”, however is in fact a different recipe. The flavours in the Asian Noodle Salad are a little more intense and it uses some different ingredients. It has long been one our most popular recipes.
