Lentil Hot Pot
This dish takes some time, but it is worth it! Full of fiber and an array of vegetables, this dish will warm you up on those chilly nights!

Ingredients
- 1 cup Brown rice cook up rice first
- 1/2 cup Red Lentils
- 3 cups Vegetable or Chicken Broth low sodium, or use water
- 2 Bell Peppers chopped
- 1 cup Green Beans chopped
- 1 cup Peas frozen or fresh
- 4 large Carrots chopped
- 1/2 Onion chopped
- 1 bunch Celery chopped
- 1 can Baby Corn
- 1 teaspoon Basil fresh or dried
- 1 teaspoon Oregano fresh or dried
- 1/2 teaspoon Pepper
- 1/2 teaspoon Sea Salt if using low sodium broth
- Organic cheese grated
Directions
Preheat oven to 350 degrees
Combine 1 cup of brown rice and 2 cups of water in a pot. Bring to a boil, put the lid on the pot and simmer on low heat for 40-45 minutes, or until rice is cooked.
In a separate pot combine 1/2 cup red lentils to 3 cups broth and simmer for 20 minutes or until lentils are mushy.
Once lentils have been started, in the same pot add he vegetables and spices. Let simmer with the lentils.
Add cooked rice to cooked lentils and vegetables and stir together. Put in a casserole dish. Top with organic grated cheese. Bake in oven for 20 minutes.
NOTE: If lentils are too watery, discard some of the liquid before placing in the casserole dish otherwise you will have soup!
