Quick Quinoa Salad

Quinoa is high in protein and calcium, and it fluffs up for a great texture for salads. Great for lunch or dinner, this salad is easy to make, and you can add all of your favorite vegetables for a variety of flavors.

Ingredients

  • 1 cup Quinoa cook 1 cup quinoa and chill
  • 1 Green Bell Pepper diced
  • 1 Yellow Bell Pepper diced
  • 4 stalks Celery chopped
  • 2 stalks Bok Choy chopped
  • 1/4 cup Almonds sliced
  • 1/2 cup Dried Cranberries unsweetened

Dressing:

  • 2 teaspoons Cinnamon ground
  • 2 teaspoons Cumin ground
  • 1/2 Lemon squeezed
  • 2 tablespoons Olive Oil extra virgin

Directions

  1. Add 1 cup of washed quinoa to 2 cups of water in a pot. Bring to a boil, put the lid on and simmer on low for 15-20 minutes or until the water has been absorbed. Let quinoa sit for 5 minutes, then fluff it up and let it cool in the fridge.
  2. In a salad bowl combine all of the vegetables, the cranberries and the sliced almonds.
  3. Add the cooled quinoa to the salad.
  4. Drizzle 2 tbsp of olive oil and squeeze half a lemon over the salad. Add the cinnamon and cumin to taste (about ½ tsp each).
  5. Alternatives: Add in some of your other favorite vegetables, such as tomatoes or cucumbers.
  6. This is also great in a wrap for a meal on the go.
