Really Easy “Sushi”

This recipe is a clean, wholesome version of "sushi". Easy to make and gets rave reviews!

  1. While quinoa is cooking, prepare guacamole and *julienne the veggies.
  2. Spread a thin layer of guacamole on a nori wrap.
  3. Spread a layer (about double the layer of the guacamole) of quinoa over the guacamole.
  4. Place a line of veggies across the wrap.
  5. Roll tightly (a sushi roller helps with this step but you can do without).
  6. Coat a VERY sharp knife with rice vinegar and slice rolls in 1″ thick pieces.
  7. Serve with Bragg’s sauce and wasabi.

*julienne means to slice very thinly, lengthwise.
