Really Easy “Sushi”
This recipe is a clean, wholesome version of "sushi". Easy to make and gets rave reviews!

Ingredients
- 1 cup uncooked quinoa rinse first!
- 4 Nori Rolls
- 2 cups guacamole
- 2 yellow, orange or red bell peppers organic
- 1 medium carrot
- 2 mini cucumbers
- 3 tablespoons rice vinegar optional
- 3 tablespoons Bragg's sauce optional
- 2 tablespoons wasabi optional
Directions
- While quinoa is cooking, prepare guacamole and *julienne the veggies.
- Spread a thin layer of guacamole on a nori wrap.
- Spread a layer (about double the layer of the guacamole) of quinoa over the guacamole.
- Place a line of veggies across the wrap.
- Roll tightly (a sushi roller helps with this step but you can do without).
- Coat a VERY sharp knife with rice vinegar and slice rolls in 1″ thick pieces.

- Serve with Bragg’s sauce and wasabi.
*julienne means to slice very thinly, lengthwise.
