Scrambled Egg Wrap: Tomato Basil

Scrambled eggs are a simple way to start your day; this wrap provides an excellent combination of protein, fiber and nutrients. It is ideal for busy mornings.

Ingredients

  • 1 teaspoon coconut oil or butter
  • 6 organic, free run eggs
  • 6-8 cherry tomatoes, chopped
  • 2-3 tablespoons fresh basil, chopped
  • 1/4-1/3 cup organic white cheddar cheese
  • 4-6 whole grain wraps

Optional

  • 1/4 cup fresh spinach, chopped
  • sea salt & pepper, to taste

Directions

Wash and prep tomatoes & basil (& spinach if desired), then grate cheddar cheese and set aside.

Pre-heat frying pan on low-medium heat and lightly grease with coconut oil or butter. Once the coconut oil melts the pan is ready.

Crack eggs into a separate bowl, and discard the shells. Gently whisk eggs with a fork to blend. Do not over mix.

Pour eggs into the frying pan and then add remaining ingredients Gently mix all ingredients together. Cook just until cheese is lightly melted and eggs are still slightly moist.

Spread equal amounts of eggs onto whole grain wraps. Fold scrambled eggs into wraps and serve.

Makes 4 to 6 wraps.
