Sweet Potato Soup

Ingredients
- 2 cups Sweet Potatoes or yams
- 1 can Coconut Milk organic
- 2 cups Water
- 1/2 teaspoon Ground Cumin
- 1/2 teaspoon Ground Cinnamon
- 1/2 teaspoon Paprika
- 1/4 teaspoon Cardamom
- 1 teaspoon Sea salt to taste
Directions
Preheat oven to 375 degrees Celsius. Clean skins of sweet potatoes (or yams) then bake for 45 minutes, or until soft. Remove from oven and let cool.
*Once the sweet potatoes are cool, remove the skins and mash in a large pot. Mash yams in large pot, and add the rest of the ingredients.
Add remaining ingredients, add remaining ingredients to a large pot and blend with hand held immersion blender or transfer to a blender or final mixing. Heat, if needed (5 -10 min,) and serve.
*Alternative method: Remove skins from potatoes or yams and place in a blender or vita mix. Add all remaining ingredients to the mixer and blend until well pureed. Heat and serve.
