Winter Market Salad

This healthy, hearty salad uses some of the best fresh vegetables available in winter. It can be a meal on it’s own, or a great side for a warm soup or chili.

Ingredients
- 1 cup beets, shredded
- 1 cup carrots, shredded
- 2 cups kale, finely chopped
- ½ cup walnuts or pecans, chopped
- 1 cup pea shoots (or other
- sprouts such as alfalfa)
- 2 tbsp chia seeds
Dressing
- ¼ cup apple cider vinegar
- ¼ cup olive oil
- 3 tbsp maple syrup
- 1-2 tsp sea salt
Instructions
- Using food processor or grater, grate beets and carrots and put in a medium bowl. Chop kale, nuts, and pea shoots and add to the salad bowl along with the chia seeds.
- In a separate small bowl, whisk all dressing ingredients together (or shake in a sealed container until well blended) and pour over salad. Toss together lightly, until all ingredients are well coated.
- Serve and enjoy!
